Recipe: Peach and Apple Cobbler

Place flour, butter, brown sugar, and salt into a stainless steel mixing bowl. Proceed to cut the butter into the. Flour sugar mixture until a coarse meal is formed and set aside for later use.

Ice Cream Ingredients

Place heavy cream and half the sugar into stainless steel sauce pot over medium heat and bring to a lit boil. Meanwhile, place egg yolk and remaining sugar into a mixing bowl and, using a wire whip, whip until lit and frothy. Once cream is at a boil, add goat cheese and stir until cheese is completely melted. Temper the egg yolk mixture with half the cream by slowly adding the oiling cream to the egg old mixture while whipping. Add that mixture to the cream and return to the stove and bring back to a quick boil while stirring vigorously being careful not to curdle the eggs. Place back into mixing bowl and place into refrigerator to cool. Once cooled, add mixture to ice cream machine and enjoy!

Cobbler Directions

Place 2 tbsp butter into a sauté pan over medium heat and melt. Add sliced apples and peaches and sauté for 2‐3 minutes or until fruit starts to release some moisture. Add cinnamon and salt and stir. Sprinkle as much topping as you would like, place into 300 degree oven and bake until golden. Remove from oven and allow to cool to room temperature.

How to Serve

Scoop desired amount onto a serving plate or bowl, and scoop 2 oz of goat cheese ice cream on top.
