Recipe: Poached Pear Ricotta Ravioli

Ingredients

  • 6 cheese (ricotta) ravioli
  • 5 silices poached pears
  • 1 Tbl. crushed walnuts
  • 4oz alfredo sauce or béchamel
  • 2oz clarified butter

Poached Pears

  • 1 anjou pear peeled and 6 red
  • 1 pinch red pepper flake
  • 2 pinches of anise seed
  • 1/2 cup cider vinegar
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cinnamon stick
  • 3 peppercorn Whl.

Poached Pear Directions

Bring All ingredients to a boil. Add pears and simmer for three (3) minutes.

Dish Directions

Heat butter and crushed walknuts. Add poached pears, alfredo, hot cheese, and raviolis.
