Spinach Pear Salad with Warm Vinaigrette
10 oz. fresh baby spinach
3 Tbsp. crumbled blue or feta cheese
¼ red onion, thinly sliced
16 oz. can pear slices, drained; reserve juice for dressing
3 Tbsp juice from pears
3 Tbsp white balsamic vinegar
3 Tbsp olive oil
¼ tsp salt
¼ tsp pepper
Wash and dry spinach. Put in salad bowl, sprinkle with cheese and onion; top with pear slices.
Step 2 in small sauce pan, heat juice, vinegar, and oil until mixture is steaming. Pour dressing immediately over salad.
Toss tableside until evenly dressed; season with freshly ground salt and pepper. Serve at once
