Bill Buford, author of HEAT, wonders what kind of cook he could be if he worked in a professional kitchen. He finds out by training in the kitchen of celebrity chef, Mario Batali of the nightly acclaimed New York restaurant, Babbo. The experience is agonizing and exhilarating. Buford thought of himself as a cook so when he had the chance to work in Mario Batali's kitchen he jumped at the opportunity. HEAT is the chronicle of his time spent as Batali's "slave," and slave he was. In a fast-paced, candid narrative, Buford describes thefrenetic experience: the trials and errors, humiliations, disappointments and triumphs as he worked his way up the ladder from slave to cook. His relationships with his kitchen colleagues and the larger-than-life and hard-living Batali fill the book. Buford takes us to a remote Italian village where Batali first apprenticed and where Buford relives his experience. HEAT is a marvelous hybrid of Buford's kitchen adventure and the story of Batali's rise to the role of celebrity chef.
